Asian cuisine is among the ones that I love, colors, perfumes, spices, make it truly unique. Ramen noodles, as well as the soup is a dish I have ever seen, especially from the cartoons and manga, but never provatto, so this is no longer the Zuppa di Gio. A variation can be made with the meat instead of shrimp, and maybe adding some slices of hard-boiled egg

Ingredients

  • 1/2 cup of noodles
  • Two carrots
  • Two Zucchini
  • Two tablespoons of vegetable broth
  • 1 teaspoon ginger
  • 1 teaspoon coriander
  • 300 g of shrimp
  • 100 grams of mushrooms
  • 4 DL of water
  • 4 mint leaves
  • Chopped parsley
  • Chili pepper (as desired)

Instructions

  • Pour the water in a pot on the stove (if it holds better, ideal thing because smells and tastes, use a flame spreader), and add the broth.
  • Wash the carrots and courgettes. Cut carrots into slices and julienned Zucchini.
  • After about 5 minutes the water is on fire, pour into the pan the carrots and then go for about 10/15 minutes
  • Add Zucchini and let go for other 10/15 minutes
  • Remove the mushroom stem, and remove the skin from the head of the fungus
  • Add mushrooms and let go for about 10 minutes.
  • Spice with ginger, coriander and chilli
  • Add the shrimp and let it go for another 5 minutes
  • Chop the Mint and add it to our stock
  • Finally, pour the noodles and let it go for about 5 minutes
  • Pour into a cup and finish the dish with a sprinkling of parsley
