Genovese in the Caribbean

Ingredients
2 cod fillets
A knob of butter
Flour
1/2 cup of milk
1/2 glass of pineapple juice
10 basil leaves
10 pitted olives
1/2 cup of oil
Juice of half a lemon
Instructions
Prepare salsa
Blend together 8 basil leaves, olives, olive oil and lemon juice until blended.
Fish preparation
Combine milk and pineapple juice
Pass the first fish in this mixture and then into the flour.
Melt the butter in a frying pan and Brown the fillets on both sides.
Pour pineapple mixture and remaining milk and mash the two remaining basil leaves.
Turn the fish on both sides to absorb the sauce and then go again for a couple of minutes.
Serve the fish and add the sauce initially prepared.
