Very quick and easy to make, with an intense red passion, ideal for special occasions like an anniversary or Valentine's day. You can use the pasta you like. I preferred the paccheri for their shape. Being small but generous when they fill up well with the sauce.

Ingredients

  • 300gr of paccheri (75gr per person)
  • 100gr shrimps or prawns
  • Orange peel
  • 2-cooked red beet

Instructions

  • Chop coarse enough beets.
  • Put in a blender, season with salt and pepper and blend.
  • Boil water in a pot, add salt and cook the pasta. Since you must go over it in the Pan, leave a little bit back, should be just over al dente.
  • A couple of minutes before the pasta is ready, you blast just just shrimp in a pan with a knob of butter and a clove of garlic. Pour in a splash of white wine, better if you have some brandy.
  • Drain the pasta.
  • Pour a little olive oil in a pan, pour the pasta, spinach puree and shrimp and turn to mix for a few minutes.
  • Serve and ultimate with a grated orange peel that will contrast with the sweetness of beetroot.
